A wake up call

I got some startling news back yesterday. Well…let me back up a sec. I have been seeing an acupunturist for the past month or so, and right before we left for Vancouver, I went in to get some blood work done. Checking different things like thyroid, cholesterol, hormone levels, things like that.

Well, I got the results back yesterday and lets just say they leave a lot to be desired. I am off the charts low in some areas and high in others. Actually, there wasn’t much good news in the blood work. Well, besides the fact that everything can be fixed and I’m not going to die.

I thought I ate a pretty good diet, but turns out there are things I could work on. I have been advised to cut out sugar, (goodbye Fro-Yo) reduce my wheat intake, up my protein like whoa, and ease back on dairy (not that I was eating that a lot anyways).

I am taking a whole slew of herbs and supplements. 7 to be exact. Two to three times a day.

After my half marathon race on Saturday, I have been advised to slow down my training, run at a much slower pace to lower my heart rate and take life a little bit easier until I get things leveled out again.

I was talking to my mom and Eric about how nice it feels to know that there is something medically wrong, and it’s not just all in my head. I have a treatment plan, a course of action and I’m excited to start feeling completely like myself again.

More Apartment stuff

 

We went and chatted with the Landlord yesterday about our new apartment. She gave us the ok to paint and to let Eric do some home brewing! We took some photos and some measurements and now it’ just wait time until we move. Hopefully the weekend of August 13th!

In the meantime, we bought a couch that is now strategically placed in our ridiculously tiny studio. Long story, but we ended up getting this couch in black from someone on craigslist, for half Ikea’s selling price. ektorp-loveseat-and-chaise-lounge__0107785_PE257558_S4

It is so comfortable and I’m pretty excited about it!

We also swung by Home Depot to pick up some paint samples…and I am even more confused than before. ha. To many choices!

DIY

I found these tutorials and knew I wanted to share them. They don’t have much to do with each other…BUT who cares.

Make Custom Color Chalkboard Paint

Start with flat-finish latex paint in any shade. For small areas, such as a door panel, mix 1 cup at a time.

1. Pour 1 cup of paint into a container. Add 2 tablespoons of unsanded tile grout. Mix with a paint stirrer, carefully breaking up clumps.

2. Apply paint with a roller or a sponge paintbrush to a primed or painted surface. Work in small sections, going over the same spot several times to ensure full, even coverage. Let dry.

3. Smooth area with 150-grit sandpaper, and wipe off dust.

4. To condition: Rub the side of a piece of chalk over entire surface. Wipe away residue with a barely damp sponge.

Hello, my name is Megan and my taste is all over the place.

Yay!

We got the apartment that our friend is moving out of! This is a huge weight that has been lifted off my shoulders. Not only is this place double our current size (so many 500-600 sq ft) but it’s cheaper! And it’s in a great neighborhood.

I’m really, really excited. The only downside, is the kitchen is still sub par. Yes, it’s bigger than our current kitchen, but it has kind of a crappy stove and it’s still pretty small.

I think Eric is not as excited about this new place as I am. I think he was hoping we would get into a newer building with nice appliances and a big kitchen. Thing is, with our budget we can’t afford that kind of place. And after really talking it out this morning we decided to go ahead and take this apartment and enjoy the things we really like about it.

And since we will be spending less, we will have extra money each month for things like home brewing, bikes crap (ha), TRAVEL, savings…etc.

I would take photos, but since our friend currently lives in the apartment, that would be weird. Basically, it’s a one bedroom/studio. There is room for a couch and a blowup mattress in the living room, and we have a semi-private bedroom. Meaning it’s a different room, but it has no door. Hello curtain!

So all day instead of doing homework (oops, but seriously, who does homework on a Friday anyways??) I have been perusing decorating sites.

See, I would really like to make this new place feel like we live there. The place we are in now is so nice, and I really love it, but it kind of feels like since it’s so small, that we just threw some furniture in it and called it good. In our new place, I would like to put art on the walls and actually spend some time thinking about what to put where…and maybe we could even paint. I doubt it, but you never know until you ask.

As I am browsing the internet, I am trying to save some photos to use as inspiration for decorating. Now, I am NOT a decorating genius, actually…I know nothing about decorating, but I’m trying to give it a go. Here are some of my favorite ideas. And no, our apartment does not look anything like these pictures. I wish. ha.

I have been thinking a lot lately about the secrets that people keep. I’m not necessarily talking about dirty, sex secrets or hidden family secrets of times past. I guess I am more talking about the things that are going on in our lives that we don’t want other people to know, or don’t feel comfortable sharing.

Then I was thinking about how odd it is that we can sit next to some stranger on a bus or train and share some random piece of information about ourselves but we don’t/won’t share things with our close friends.

Then of course my thoughts brought it home to me and I started to think what things I share with what people and why. I think I’m a pretty open person, and at some point I will probably tell you something about myself that you don’t even want to know. But there are things that I just don’t feel comfortable sharing with even my closest friends. Heck, there are some things I’m scared to share with Eric.

Sometimes I feel like all I talk about on this blog is, sad whoa is me stuff. And I never mean to share just the bad things, but it does seem to work out that when I’m struggling with something, I use this as an outlet to get my feelings out.

I have an ongoing health thing(not fatal)…and I’m not going into details…and if you ask me about it in person, I probably won’t want to talk about it…but I need prayers/good thoughts/whatever sent my way. I’m honestly starting to lose hope that this health issue will ever be resolved and it is getting to me.

And the hard part is, there doesn’t seem to be anyone that can help. There are doctors that are hoping to help, but there is no guarantee and I don’t know what I’m going to do.

I  feel broken, and alone. And there is not enough tape or glue in the world to put me back together.

Lentil ‘Meatloaf’

We are trying to incorporate meat into our diet about once a week these days. I think Eric would like to add on another day if meat wasn’t so expensive. I still don’t really enjoy eating meat, (love me some tofu!!) although it seems lately the meat I will eat just happens to be BBQ.

Anyways, this isn’t about what I do and don’t like to eat. This is about a delicious lentil ‘meatloaf’ that I made last night. The thing about lentils is they are very inexpensive and if your lucky enough to have a grocery store that carries them in bulk, you can get just the amount you need for a single recipe instead of buying a huge bag that you might not use up.

We ate this loaf along side cauliflower from our CSA box and mom’s homemade sourdough bread. It was truly a good dinner and since it’s been cooler at night these days, it was a healthy comfort meal. And you know what? leftover loaf would make a great sandwich!

1 cup lentils

3 cups vegetable stock or broth

1/2- 1 large yellow onion sm. dice

2 large carrots grated

1 tbsp olive oil

3 cloves minced or finely grated garlic

1 cup breadcrumbs

2 eggs

1 tsp oregano

1 tsp sea salt

1/2 tsp ground black pepper

2 tbsp ketchup

1 tbsp pure maple syrup

1 tbsp brown rice syrup, or agave nectar, or honey

Preheat your oven to 350 degrees.

Simmer together the lentils, broth until the lentils are tender and have absorbed all the broth.

Prep the veggies. Saute everything in the olive oil over medium high heat for six minutes, or until soft.

Transfer the mixture to a large bowl, add salt, pepper and oregano.

Add the breadcrumbs, eggs and cooked lentils and toss well. Press mixture into a greased loaf pan.

In a small bowl combine the ketchup, sweetener and balsamic vinegar. Spread on top of loaf. Bake for 40ish minutes.

Goals

 

Today in class we talked about setting goals.

A lot of the info was stuff I had heard before, but for some reason it sunk in a little deeper today.

I would like to think of myself as a free spirit, but I know that’s not entirely true. I like my lists, my plans and looking forward to the future. I like to know what is going on next week and next month. I like to plan events or activities and work on what I need to get done before hand.

But when I think what are my goals? I come up a little lost. I think I know what I want to do when I graduate, but am I sure? Today reminded me that I need to really be thinking on what I want to do after school, and I need to start figuring out what my goals are.

Here are some of the things we talked about in class.

When you are setting your goals, how you see yourself can have a negative or positive affect on your goals. If you don’t think very highly of yourself, your probably not going to set goals that will really help you exceed. If you think to highly of yourself, you might set a goal that will never become a reality.

Write down in “I Will” sentences. Such as, by May of 2012 I will graduate Culinary School.

Set a specific date. If you just say, I will run a marathon, then there is no time frame for you to achieve that goal. You need a date to work towards.

Identify everything you need to achieve your goal. Ok so you want to open a restaurant. What are the things you need to do before hand? Maybe some management class? Maybe some research.

Identify obstacles to overcome. What are things that might get in your way of reaching your goal. Have a plan to work around those obstacles or at least know how to deal with them when they arrive.

Identify people/groups that can help you reach your goal. If you want to run a marathon, maybe you should join a running group. Or find a personal trainer or even a friend to hold you reliable to your training schedule.

Create a detailed plan of action. You can’t just say your going to do something and not have a plan. Write out what needs to be done and when you want to have done things by.

And remember what is in this for you. Personal growth? Experience? It’s your passion? Try to always keep in mind what reaching that goal will do for you.

Sometimes I get caught up in the idea that I need to be skinnier, or fitter. If only my thighs didn’t touch, or I had muscular arms…then I would be content. If only I had a flat stomach, then I could really be happy.

In those times, I have to remind myself. I have run 18 miles. I can hold my own in a 60 min yoga class. I have biked 80 miles in one weekend. I wont let how my body looks affect my happiness because I know that it’s those thick thighs that let me do things like this…

Moving…again…

 

And the search is on. We are moving again. And I have mixed feelings about moving. I love it and hate it. Our tiny little studio has been good to us, but it’s time for something with a bigger kitchen. Or even a kitchen. ha.

We are having to weigh the pros and cons of more square footage with a higher monthly payment, or smaller space with less money out of pocket. It’s a tough decision for sure.

BTW-the cold salads I made last week were this one and this one.

Delicious and the perfect thing for a hot summer dinner.

A month??

How is it that it has been a month since I last updated?
How is it that it is already July 10th?
How is it that we have lived in Portland nearly one year?
How is it that we have been married almost three years?

It's 7:30 on a Sunday night and I am struggling to keep my eyes open.
I worked at a wedding yesterday that went late and didn't get to bed until 2am. Up by 7 was difficult to do, but I did it...and now I am trying not to fall asleep.
8pm is an ok time to go to bed right?

I have so much free time in the mornings on MWF that I am going to start biking with Eric to work before class. He will no longer be able to use the excuse that he can do something because he biked 28 miles that day.

I find it odd that I have no problem biking a lot of miles these days. I remember not to long ago that I didn't want to bike 5 miles, let alone 20+.

We have good friends named the Newtons and we got to bike around with them today. We picnic'd it up and had a great time. How lucky are we to not only have good friends in Portland, but to have some that just so happen to have the last name as us?

All we have been eating lately is variations of cold salad like wheat berry pinto bean salad and lentil salad and asian noodle salad. They are pretty good most of the time and I am thankful for the fresh produce flowing in. I can't seem to get enough of kale these days. Or fresh fruit. I was just saying today that I could easily go on a fruit only diet.

Eric has taken over our small studio with his bike and I kind of like watching him work on it. He whistles and will occasionally look over and smile.

We had the best time on our vacation and I have photos to prove it. To bad it takes forever to upload photos on blogger.

It is now 7:42 and I am going to give into my sleepy eyes...but before I go..
Makes me laugh every time.
